This year’s planting has been put off several times now by nearly consistent rain. The sickness going around has continued to make life interesting, but I’ve been trying to increase my vegetable intake where I can. Smoothies have continued to be rockstars in that arena, with a new contender stepping up.

Vegetable soup has a long standing tradition of being a staple among families, but has only recently truly won its way into my heart. It turns out vegetable soup can be hearty, tasty, and filling. As for protein, there are no worries there if one is added as a sandwich or a side. Just let the dishes speak for themselves, and do what they were meant to do.
